Course description
This course explores the broad spectrum of eating, activity, and weight-related health in young people and their families, as well as multi-layered factors that influence these outcomes. Students learn about Project EAT (Eating and Activity over Time), a comprehensive, longitudinal body of research, which has examined eating behaviors, physical and sedentary activity, body image, disordered eating, and weight status, as well as an array of multi-level influences, in young people and their families for over three decades. Students learn about the process of implementing research aimed at studying eating, activity and weight-related issues, as well as socio-environmental, personal, and behavioral correlates of these outcomes. Students learn about conceptual models, particularly the social ecological framework, and how to use such models to identify and address risk and protective factors for eating, activity, and weight-related outcomes. Students learn how to apply conceptual models and research findings to the broad spectrum of eating, activity, and weight-related health, through the study of intervention strategies and via a personal analysis of factors that have influenced their own eating, activity, and weight-related health.
