Course description

This course is for CMP students only. While it is mainly didactic in nature, the goal is to learn through interaction, practice, and discussion. This course has a focus around nutrition education and counseling. Students will practice taking diet histories within nutrition assessment and move to practicing providing education, nutrition counseling and motivational interviewing with individuals in an outpatient setting as well as working with the public. In doing so, students will learn the importance of considering the whole person and the uniqueness of each individual.

ACEND (the Accreditation Council for Education in Nutrition and Dietetics) sets standards for education and competencies for learning in order to ensure exceptional education and preparation to become a competent entry-level dietitian. The CMP trusts in ACEND’s mission is to ensure the quality of nutrition and dietetics education to advance the practice of the profession. This series of four courses (held each fall and spring of the CMP) is designed to meet 23 out of 82 ACEND competencies (~30%) most of which are focused on dietetics in professional practice or dietetic elements that are not covered in supervised practice or within the MPH public health nutrition coursework. Another aspect of the course series design is to bring a level understanding of specific nutrition skills and concepts to students with differing undergraduate backgrounds. Lastly, the course is constructed to move basic concepts of nutrition into application of skills needed to work with real people and populations. With each cohort meeting weekly each fall and spring, an additional benefit of this course is ongoing discussions and support in navigating the program, sharing internship experiences, and building community.
